Community Supported Agriculture

CSA is short for Community Supported Agriculture.  It means you become part of Elkstone Farm, sharing in our seasonal risks and rewards.  Here’s how it works: CSA shareholders make a small investment that directly supports the farm’s mission to nurture regenerative, community-based agriculture. Shareholders then reap the bounty of each harvest - collecting a weekly box packed with the freshest seasonal produce and herbs from our Farm Stand in Strawberry Park.  By joining the CSA, you are showing your support for local, small-scale agriculture, making a better connection with the land, and being nourished by the most nutrient dense and freshest food around.

There are CSA Shares for both spring, summer and fall seasons.  For our neighbors wanting to sample the delicious spectrum of foods, sign up for all three!  Since we intend the CSA to be a close-knit farm community, we are also inviting shareholders to participate in Elkstone’s enchanting Farm-to-Table Dinners.

Visit Our Farm Stand

The Farm Stand, located in a picturesque, red-roofed barn near Butcherknife Creek, is Elkstone’s community-oriented marketplace.  It’s not just a store; it's a gathering point for neighbors to mingle and share in their support of locally grown food.  At the Farm Stand, we offer organically grown produce, fresh baked goods, flowers, and longtime farm favorites, like condiments, preserves, herb blends, and teas.  

Hours: 3:00 PM - 5:00 PM on Tuesdays between July 5th (first farm stand is on a Wednesday because of July 4th!) and October 17th

Dining at Elkstone Farm

Join us for an evening of casual farm-driven fine dining at Elkstone Farm.  Here at the farm, we offer the most unique dining experience in the Yampa Valley.  Chef Russell Goodman and his staff prepare dishes that evoke a sense of time and place, highlighting the produce of the farm and the valley.  We offer lunch in the summer, and dinner throughout the year.  Summer lunches are offered in conjunction with educational classes and retreats at the farm.

Farm Dinners

We offer our ‘CSA dinners’ throughout the summer months. As produce comes in from the field, it is used right away to build dishes that resonate with freshness and the terroir of our farm. Dinners are served on our farmhouse patio for up to 16 diners total, creating an intimate sense of dining with community. We work with sommeliers to provide wine pairings selected for each menu. We release tickets for the CSA dinners in late winter/early spring.

The Chef's Table at Elkstone Farm

We are pleased to offer the Chef’s Table at Elkstone Farm, an 8-person dining experience served at the kitchen table in our farmhouse. Reservations may be made for 1-8 guests depending on availability. We release tickets for the Chef’s Tables throughout the year, and dates for 2023 will be available for purchase beginning in January. Guests at the Chef’s Table enjoy a 7-course meal made with ingredients from the farm, the valley, greater Colorado and the Rocky Mountains. The Chef’s Table reflects the season and during the summer we serve the freshest vegetables, mushrooms and greens possible, often harvested that day. Throughout the colder months we focus on the ingredients we preserve and store from the summer. This includes the items we keep in our handcrafted root cellar, on our shelves and in our coolers, while we continue to grow salad greens and cold-hearty vegetables in our greenhouses. We work with local sommeliers to provide wine pairings for Chef’s Table dinners, and details will be provided prior to your dinner.

Private Dining

An exciting option for groups of 6 to 16 people is access to our private dining. For groups of 6-8 guests a private dining reservation guarantees you the entire Chef’s Table for your party. For larger groups (7-16 guests) dining may be possible in our sub-tropical greenhouse or on our farm patio, weather depending. We can accommodate any dietary restrictions or preferences. Private dining provides the guest with all the amenities of the Chef’s Table, as well as the opportunity to bring your own wine and have input on the menu if desired. Pricing

Both the Chef’s Table and private dining are reserved with a deposit. Deposits are non-refundable, but they are transferrable. If you are unable to attend a dinner that you have reserved, we encourage you to transfer the tickets to another guest.

Our Products

We’ve been hard at work in the Elkstone Kitchen creating unique culinary complements and body care products.  Each is crafted using herbs, fruits, and vegetables harvested from the farm and then thoughtfully packaged.  We currently offer baked goods, artisan crackers & cookies, flavorful preserves, condiments, herb blends & seasonings, loose leaf teas, and skin care products.

Many Elkstone Farm products are available at the Summer Farm Stand, which is open 3:00 PM - 5:00 PM on Tuesdays between July 5th (first farm stand is on a Wednesday because of July 4th!) and October 17.

The CAA Market (Community Agricultural Alliance) - a local nonprofit that supports and promotes Yampa Valley agriculture - carries our products (and often our fresh produce) on their website and in their downtown Steamboat Springs storefront.

Executive Chef

I’m Chef Russell Goodman, believer in the power of fresh local food and cooking methods that allow that food to shine.  As a former epidemiologist, I have come to realize the crucial role nutritious food plays in whole body health, and therefore I’m an advocate of food security for all.  A core belief of mine is that provenance matters in food.  The way our food is grown and processed impacts its appearance, its taste, and its nutritional quality.  Having firsthand knowledge of Elkstone Farm’s produce - seeing it go from seed to fruit-bearing plant, and then having the opportunity to make use of it in the kitchen - is a beautiful experience that I would like to share with others.

I will be using this journal to share thoughts and recipes from the farm as the seasons change and the farm’s landscape morphs from snow-covered and dormant, to alive with people and produce.  Growing food in the Yampa Valley presents unique challenges, since our short growing season and alpine environment demand a lot of the farmer.  The result, however, is food that could only have been grown here - sweetened by the frost and seasoned by the soil of our valley.  It is our job as chefs to cook these vegetables in a way that highlights their best qualities and conveys a sense of time and place.  The recipes we provide are an excellent place to start.
