Winter Green Salad

Serves 6-8

! box Elkstone Spicy Greens Mix
1 bunch Kale
1 Granny Smith apple, julienned
1 15-oz can Chickpeas, drained and rinsed
1/2 cup Sliced almonds, roasted
4 oz Goat cheese
Elkstone Meyer Lemon Marmalade Vinaigrette (see separate recipe card)

1. Combine apple, beet, and chickpeas in a bowl.  Season with salt and pepper an toss with vinaigrette.  (Recipe for Elkstone Meyer Marmalade Vinaigrette may be found on a separate recipe card).
2. Remove stems from kale and tear into bite-size pieces.
3. Add greens and kale to the bowl and toss to coat.
4. Crumble goat cheese over the salad and sprinkle with almonds.
