Serenity Tea Sorbet or Granita
1/2 cup Serenity loose leaf tea
1 cup Sugar
pinch Sea salt
4 1/2 cups Boiling Water
1 Tbsp Lemon Juice
1. Combine tea, sugar, and salt in a heatproof bowl.
2. Add boiling water and stir to dissolve.
3. Let the tea steep for 10 minutes.
4. Strain the mixture through a fine mesh strainer.
5. Add lemon juice.
For Sorbet: Chill the tea mixture for at least 1 hour. Freeze in an ice cream machine according to the manufacture’s instructions.
For Granita: Pour the tea mixture into a shallow baking dish and place in the freezer. Once ice begins to form on the edges stir with a fork every 15 minutes until it becomes a semi-firm slushy mixture.
