Panzanelle

Serves 6-8

INGREDIENTS
2 pounds Tomatoes, cored and cut into 1″ pieces
1 small Red Onion, peeled and julienned
1 Cucumber, seeded and sliced 1/2″ thick
1 Red Bell Pepper, cut into 1/4″ pieces
2 oz Basil leaves, torn in pieces (approx 1 cup)
3 cups Croutons
To taste Salt and Pepper
1 cup Balsamic Vinaigrette

DIRECTIONS
1. Combine tomatoes, red onion, cucumber, an red bell pepper.
2. Season with salt and pepper.
3. Add basil and croutons.
4. Drizzle with vinaigrette.
