Moroccan Carrot Salad

Serves 6

5 medium Carrots, peeled and grated
1/2 Red onion, thinly sliced
1/4 cup Golden raisins, chopped
1 Tbsp Mint, chopped
1/4 Parsley, chopped

1/3 cup Lemon Juice
2 Tbsp Olive oil
1 Tbsp Honey
Pinch Garlic powder
1 tsp Ground Cumin
1/4 Cinnamon
1 tsp Ground coriander
To taste Salt and pepper

1. Soak the red onion in cold water for 10 minutes to remove the sharpness.
2. Whisk together the dressing ingredients and set aside.
3. Drain the red onion.
4. Toss all the salad ingredients.
5, Dress the salad 5 minutes before serving.
