Green Goddess Dressing or Dip
Makes 1 pint
1 clove Garlic or 1 garlic scape
1 Tbsp Lemon juice
3 Tbsp White wine vinegar
1/4 cup Chives, chopped
1 cup Parsley leaves
1/2 cup Fresh dill
1/2 cup Plain yogurt
1/2 Olive oil
Salt and pepper to taste
1. In a blender, combine the garlic (or scape), scallion, lemon juice and vinegar.
2. Puree until smooth.
3. Add chives, tarragon, parsley, dill and yogurt.
4. Puree. Gradually add the olive oil.
5. Add salt and pepper to taste.
Summer Dip: Mix 1 cup Green Goddess Dressing with 1/2 cup sour cream or plain yogurt.
Serve with Elkstone carrots, celery or any Elkstone crackers.
