Elkstone Farm carrots spend their days and nights nestled deep below ground, and as the temperatures dip, they turn irresistibly sweet as the starches transform into natural sugars. We select a special variety of carrot seeds that feature the colors of the rainbow, ranging from orange to yellow, white, and purple.
These colorful roots are fabulous whether prepared in sweet or savory dishes, and they pair particularly well with fresh herbs like parsley, cilantro, dill, and thyme – as well as spices like cinnamon, cumin, cayenne and paprika. Carrots shine when saddled up alongside ginger, garlic, tahini, yogurt and walnuts, and you can’t go wrong simply glazing them with a touch of honey or maple syrup. And don’t just toss out the tops! Whiz up those bodacious greens into a quick pesto or gremolata, and your dinner guests will think you are a five star chef.
Cut off carrot tops an inch above the root, as they will draw out moisture and cause the roots to go limp. Store roots in a produce bag in the vegetable bin of your refrigerator.
