Poblanos are the Goldilocks of the pepper family – not too hot, not too mild, and just the right amount of rich, earthy flavor. They are a staple in Latin and Mexican cuisine, and they make fabulous vessels for stuffing with cheese and other fillings thanks to a large cavity and thick, sturdy walls. Chiles rellenos anyone?

With a spice level somewhere between a bell pepper and a jalapeno, poblanos are very versatile and are adapted to a wide range of cuisines and flavors. This voluptuous, deep-green pepper teams up well with ingredients like tomatoes, lime, cilantro, cumin, coconut, onions, garlic, chicken, pork, and beef. 


Store peppers in a produce bag in the vegetable drawer of your fridge. Be sure the peppers stay dry, as unwanted moisture will shorten their shelf life.
