Who knew peppers could be this charming? Lunchbox peppers are a colorful medley of snack-sized sweet peppers that you can’t help but love. As the name suggests, we’re pretty sure these little cuties will be a favorite in your lunchbox, and they are lovely whether raw, sautéed, or roasted. Colorful vegetables are known to have more nutritional benefits, and these bright red, orange, and yellow peppers contain especially high levels of beta-carotene and vitamin C.
Lunchbox peppers are multifaceted and can be enjoyed straight off the farm in salads, salsas, fajitas and stir-fries. They also make fabulous snacks or hors d’oeuvres when filled with herbed cream cheese and other yummy fillings. Lunchbox peppers pair particularly well with ingredients like goat cheese, fresh summer herbs, balsamic vinegar, tomatoes, and red onion.
Store peppers in a produce bag in the vegetable drawer of your fridge. Be sure the peppers stay dry, as unwanted moisture will shorten their shelf life.
