Looking for a snazzy substitute for your everyday bell pepper? Look no further than the striking Carmen pepper. Carmen peppers feature a deep red color and an elongated shape, hence their Italian name Corno di Toro, which translates to “horn of the bull.”  Though they may look potent, Carmen peppers have no heat and are beloved for their rich, robust sweetness.

Flavor pairings:

Similar to bell peppers, Carmens are super versatile and perfect for fajitas, stir-frys, soups, curry bowls, salsas, or sliced raw into salads or wraps. The wide cavity and thick walls of Carmen peppers hold up well to roasting and grilling, and they make great receptacles for hearty stuffings. Other flavors that pair nicely with Carmen peppers are avocado, BBQ spices, black beans, eggplant, feta cheese, fresh herbs, garlic, tomatoes, bright vinegars and citrus.


Store peppers in a produce bag in the vegetable drawer of your fridge. Be sure the peppers stay dry, as unwanted moisture will shorten their shelf life.
