Widely recognized as the workhorse of the Allium family, New York Early onions are a fabulous all-purpose onion with an exceptionally long storage life. This variety of yellow onion is known for its versatility, featuring a meaty, mild flesh that is delicious whether raw or cooked. Yellow onions typically contain high concentrations of sulfur and sugar, which makes them an ideal choice for sauteing and caramelizing.

Whole onions are best stored in a cool, dry, dark and well-ventilated area. Peeled onions can be stored in the fridge for 7-10 days, while sliced or cut onions can be refrigerated for 5-7 days.
