SUMMARY:Cultivating Oyster Mushrooms at home with Micheal Butts: May 15th\, 2025
DESCRIPTION:Micheal will spend a day introducing you to growing Oyster Mushrooms on a small scale with simple processes you can do at home\, and you’ll go home with your first little “garden” of mushrooms.   In the morning we will start by introducing you to the wonderful world of fungi\, discuss growing mediums well suited for Oyster varieties and the conditions that help them to thrive to abundant fruiting. We will discuss where we can find all the commonly available resources. I will have step by step instructions for you on preparing the growing medium and how to create the favorable conditions for fruiting as the mycelium grows.  This class was really popular last year and it was wonderful hearing about the successes of the students growing mushrooms! \nAfter a wonderful farm-to-table lunch at the farm we will spend a couple hours having fun building our own mushroom grow bags with materials I will have ready to assemble.   Folks will go home with some of their own innoculated mushroom bags. \n\n \n\n\n\n\nMicheal Butts is an urban homesteader in downtown Loveland\, Colorado packing his quarter acre estate with a flock of yard birds\, several colonies of honey bees\, garden beds\, a wood fired coffee roastery\, beer and mead brewing equipment and a firewood shed. He is the production manager for Crown Mushrooms farm in nearby Berthoud.

SUMMARY:Book Club Dinner: Animal\, Vegetable\, Miracle: May 13th
DESCRIPTION:This is the second of our more conversational family-style dinners at the farm.    We are excited to present an evening that nourishes us with good food from the farm while engaging in a deeper community experience.  Our farm manager\, Marco Lam\, will be facilitating the discussion along with special guest\, Danielle Skov\, the owner and proprietor of our amazing local bookstore\, Off the Beaten Path.   We have both been inspired by Barbara Kingsolver's work and what better place to discuss a book on being a locavore than over a sumptuous farm-to-table dinner! \nWhen published in 2007\, ANIMAL\, VEGETABLE\, MIRACLE was embraced by readers worldwide and quickly earned its place as a credo for the locavore movement. The family's chronicle of struggles and triumphs as they rooted themselves to their Appalachian farm and adopted a locally-produced diet was met with critical acclaim\, spent years on bestseller lists and won the James Beard Award. \n“Ten years ago\, we wrote this book about our decision to get serious with eating local\, more or less forsaking all others\,” Barbara writes. “It was such a novel idea that we had to make up our own language for it\, although the word ‘locavore’ germinated so naturally from the lexicon that it was invented simultaneously by many people at around the same time. Now it’s in the dictionary and on menus all over the place. What we’d thought of as our eccentric family notion broke out into something of a scene. I don’t mean that we created a scene—not at all—but that we happened to publish our family’s story at a moment when lots of families were ready to examine and take more control of their own food stories.” \nChef Russell will take the best of the produce and fruit off the farm and craft a sumptuous family-style meal for us as we both talk about and eat from our local food chain! Buy your book at Off the Beaten Path and read it beforehand so that we can have a strong book group!

SUMMARY:Tea Ceremony in the Greenhouse with Marco Chung-Shu Lam\, April 29th\, 2025
DESCRIPTION:Please join us for a tea ceremony in our beautiful four season greenhouse. Drink tea in a grove of citrus and fig trees\, flowers and herbs\, while the cold weather is brewing outside. We will be sharing traditional bowl tea in the Cha Dao style of tea ceremony. Marco will share a bit about tea practice and there will be time after to relax in the greenhouse. \nCha Dao\, “The Way of Tea” is a practice that comes from the depth of Chinese culture and from the Taoist practices of relating to nature as medicine. The ancient Taoists and sages use tea as both plant medicine and as a path to cultivate awareness and to deepen one's mediation practice. Tea is one of the most accessible plant teachers and as a gentle spirit\, it can guide you into a more powerful and centered relationship with nature. \nLed by Marco Chung-Shu Lam\, who is one of our farm managers and also runs an integrative medicine clinic in Boulder. He is a skilled practitioner of internal martial arts\, acupuncture and herbalism who has practiced in Colorado for over twenty years. He has a deep love of tea and will be sharing from his personal collection of both aged shou pu-erhs and an exquisite oolong in this session.

SUMMARY:Elkstone Farm x Nomadic Table Collaboration Dinner: Water - APRIL 9\, 2025
DESCRIPTION:Join us for an evening of dining unlike any other in our valley! Chef Justylyn Alair of The Nomadic Table will be joining Chef Russell Goodman at Elkstone Farm for a series of four dinners highlighting the terroir of the Yampa Valley.  We will be offering a 9-course tasting menu\, created by chefs Justylyn and Russell\, wherein each course is indelibly linked to the farm\, the valley and the region. On the farm\, we have been preserving products grown in the summer for us to share with you throughout the winter.  We pair things we saved at the height of their freshness with the handful of items still growing under the snow.  We then creatively interpret these ingredients to provide you with a set of dishes that are unique in character and flavor\, and which could only have been created at this particular intersection of time and place. \n  \nEach of the four dinners in this series will reflect one of the Ancient Greek elements: Fire\, Earth\, Water\, Air.  This third dinner will embrace the element of water\, as interpreted by the chefs.  Whether simmered in broth or steamed in superheated moisture\, water will be an integral component of each of the courses in this bespoke dinner. \nDinner will be served at our Chef's Table in the farmhouse kitchen\, where guests can watch the cooking take place and be served directly by the chefs. \nWe can accommodate any dietary restrictions with sufficient notice. \nWe have lowered the price of this event!  Dinner at the Chef's Table with these two amazing chefs is now $200 per person\, exclusive of tax and gratuity.  Purchasing a ticket at this time places a $100 deposit\, and you will have the opportunity to complete payment and add any gratuity at the end of the evening.   \nChef Russell has been the creative culinary force on the farm for over four years.  He is extremely pleased with his pivot from a career as a scientist to his current role as Executive Chef following a twenty-plus year history in the culinary arts.  His style of cooking honors ingredients which are often grown on the farm and harvested by hand\, using classical techniques to gently gild them in an expression of flavor and provenance.  Along with his wife\, Katy\, they seek to cultivate a genuine and heartfelt atmosphere of hospitality in the farmhouse kitchen. \nJustylyn Alair was born in Angeles City\, Philippines and migrated to Northern New Jersey as a young child. She grew up in an ethnically diverse metro suburban area on the outskirts of New York City that planted the seed for her love of international cuisines.  She attended culinary school at Johnson & Wales University in Providence\, RI. During the summers of college\, she worked at The Westchester Country Club under Chef Edward Leonard\, CMC. This experience ignited her passion and drive to learn under the best culinary kitchens being surrounded by IKA Culinary  Gold Medalists during her time at Westchester. \nAfter graduating from culinary school\, she worked at Bar Boulud in New York City. She was accepted into the prestigious Greenbrier Apprenticeship program in West Virginia where she spent the next 4 years honing her culinary and competition skills.  She believes that food is common ground for a universal language.

SUMMARY:Book Club Dinner: The Serviceberry: March 6th\, 2025
DESCRIPTION:This is the first of our more conversational family-style dinners at the farm.    We are excited to present an evening that nourishes us with good food from the farm while engaging in a deeper community experience.  Our farm manager\, Marco Lam\, will be facilitating the discussion. \nRobin Kimmerer's new book\, The Serviceberry\, is a bold and inspiring vision for how to orient our lives around gratitude\, reciprocity\, and community\, based on the lessons of the natural world. It's about indigenous wisdom\, how we want to live\, what we value\, how we want to be in relation\, and whether we can imagine and cultivate a system that nurtures mutual well-being and flourishing. \nThe book is an easy\, short read and the 128 pages can easily be read in the evening.  Please read the book beforehand and come prepared to be in dialogue about the book with your neighbors.   Several of us on the farm are reading the book and attending. \nChef Russell will make a family-style dinner which will be followed by a serviceberry dessert!

SUMMARY:Tea Ceremony in the Greenhouse with Marco Chung-Shu Lam\, February 20th\, 2025

SUMMARY:Elkstone Farm x Nomadic Table Collaboration Dinner: FIRE February 18 \, 2025
DESCRIPTION:Join us for an evening of dining unlike any other in our valley! Chef Justylyn Alair of The Nomadic Table will be joining Chef Russell Goodman at Elkstone Farm for a one time only event highlighting the terroir of the Yampa Valley.  We will be offering an 8-course tasting menu\, created by chefs Justylyn and Russell\, wherein each course is indelibly linked to the farm\, the valley and the region. This first dinner will embrace the element of fire\, as interpreted by the chefs.  Whether cooked in flame\, or touched by embers\, fire will be an integral component of each of the courses in this bespoke dinner.

SUMMARY:Men's Retreat: The Integrated Man\, October 4-6th\, 2024
DESCRIPTION:The Integrated Man:\nCultivating Masculine Power\nOctober 4 - 6\, 2024 \nCut through Your Stories\nDeepen Your Impact\nBecome the Man You Were Meant to Be \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nWhat is holding you back? At the end of the day the only one in your way is you. \nYou are responsible for creating the life you want. But you don’t have to do it alone. In fact\, you can’t. We need each other. \nIf your heart was fully yours to express\, if your gifts were unapologetically presented to the world\, if you were willing to be as bold and as brave as you’ve witnessed men you admire being\, what might you do with your one\, precious life? \nWhat parts of you are holding you back? Why? \nDiscover and claim your deepest power. This weekend is designed to help you to see\, claim\, and clarify your purpose in all the important places of your life — sex\, intimacy\, and romantic partnership. Career\, money\, and being lit up by what you do. Plus community\, connection\, and having a group to support and challenge you on the path. \nYou can’t do this alone. There are few things more powerful in the world than a group of strong\, conscious\, embodied men willing to serve one another. \n\n\n\n\n\n\n\n\nCommon Challenges We Address \n\n\nLack of emotional or physical intimacy (sex) \n\n\nCareer inertia \n\n\nPoor boundaries (standing up to a boss\, a spouse\, a child\, a parent) \n\n\nNumbed out — unsure of what you’re really feeling (no feeling = no balls and no heart\, which means your life is stuck) \n\n\nOut of touch with your heart’s purpose \n\n\nScarcity in money\, love\, or life \n\n\nChallenges with a marriage or partnership that seems to have run out of passion and energy \n\n\nFeeling you need to manage the emotions of your partner\, your boss\, your children\, or your parents (you don’t\, and shouldn’t) \n\n\nFeeling you’re too intense\, or not intense enough \n\n\n\n\n\n\n\n\n\n\nMasculine power comes with being in touch with your heart and your balls. You know these types of men\, because they’re rare as the most precious of stones. These men can access an emotionality that is grounded\, not weak. They have impeccable boundaries in love and work yet aren’t hard or calcified. \nThey are partnered with powerful women (or men) and able to be in a mature and heart-centered relationship that makes both people stronger than either one. They are strongly independent yet strive to create inter-dependent relationships (not co-dependent). They are vulnerable but still deeply masculine\, strong\, powerful\, playful\, and embodied. \nThe Integrated Man has integrated a strong back and a soft belly so he can get what he wants faster\, easier. He knows love\, intimacy\, community. He is comfortable by himself\, and in the stillness of meditation or nature. He knows who he is\, what he stands for\, and what he’s willing to die for. \n\n\n\n\n\n\n\n\nWe get one chance at life\, one time through to bring\nour gifts fully into the world.\nCareer. Love. Parenting. Creativity. Self-expression. Service. \n\n\n\n\n\n\n\n\nIn the (very) intensive weekend\, you’ll learn to hold boundaries with an open heart; to take in criticism\, and challenge but not collapse — or posture. You’ll gain the experience of being more humble and more powerful. \nIt’s time to transcend ideas of what the masculine can or should be in order to find your own intelligent\, skillful\, fully alive\, highly relational\, emotionally sophisticated\, and deeply powerful self. \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nPractices Include:\n\n\n\n\n\n\n\n\n\n\nHot Seat practices — you’ll be placed in the center of a circle and get the full challenge and support of the four leaders \n\n\n\n\nBeing embodied — most men are cut off from what’s really happening inside of their bodies\, which means they’re cut off from not just their heart but also their balls \n\n\nLeading your own groups and helping other men to find greater clarity \n\n\n\n\n\n\n\n\n\n\n\n\nTaking radical responsibility for your life and your relationships as they are right now \n\n\n\n\nGetting out of your victim mindset that blames the other person for how you feel and what choices you think you have \n\n\nStaying relational even in your biggest triggers — and why it matters for your own growth\, ambition\, and life fulfillment \n\n\n\n\n\n\n\n\n\n\n\n\nTranslating the work of the weekend to your real life \n\n\nLeading with curiosity —especially when defensiveness and the impulse to fix or give advice are present \n\n\nMindful\, fierce presence with yourself and with the other men. You’ll be taught how to slow down and be present with yourself and with others\, and why it matters so much \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nThis will be led by experienced men’s work facilitators Jeffrey James Howard\, Marco Lam\, Keith Martin-Smith\, and Eddie Konold. Jeffrey and Eddie are licensed psychotherapists. Marco is an acupuncturist\, permaculture expert\, and community leader. Keith is an ordained Zen priest\, published author\, and martial arts lineage holder\, and Marco and Keith have been in the same men’s group\, with the same group of men\, for 14+ years. \n\n\n\n\n\n\n\n\n“Keith had a strong presence\, physically and spiritually with meditation and embodiment exercises. Eddy was love and gentleness\, killing it with kindness and active\, warm\, soft reflective listening and precise at picking up relational material to give back and act on. Marco was mindful\, honest\, and more of a quiet/wise leader and organizer. Jeffrey was an excellent facilitator\, listener\, and therapist\, coming in with challenges that quickly closed in on the issues at hand\, using a knife to sharpen his teeth and go in for the kill. \nWatch out! They all worked very well together\, cohesive\, displayed confidence and therefore trust and a letting go into the work and the group. The container was beautiful and held tighter as the retreat came to a close. I would participate again. I would recommend this to any man wanting more from his relationships.” \n— GA\, Spring 2022 \n\n\nSchedule\n\n\n\n\n\n\nFriday  \n6-7:15 - Council \n7:30-8:30 pm Dinner at Elkstone Farm \n8:30- 9:10 pm Fire circle: Turn up the heat \n9:10 Close for the night \n\n\n\n\n\n\n\n\nSaturday \n9:00-9:40- Sit \n9:45-10:15- Physical/embodiment exercise \n10:15-1200 Content/circle/teaching \n12:00-1:00- Lunch \n1:00-3:30- Content/circle/teaching \n3:30-5- Extended break/wander/practice period \n5-6:30- Content/circle/teaching \n6:30-7:30- Dinner \n7:30-8:45- Closing circle for the day \n8:45-9 — Warrior’s rest/Meditation \n\n\n\n\n\n\nSunday \n9:00-9:40- Sit \n9:40-10:00 Physical/embodiment exercise \n10:00-11:30- Content/circle/teaching \n11:30-11:45- Break \n11:45-12:00- Physical/embodiment exercise \n12:00-1:00- Lunch \n1:00-3:30- Content/circle/teaching \n3:30-3:45 Break \n3:45 - 4:20 Circle/teaching \n4:20 - 4:30 Break \n4:30-6:00 - Bringing it home \n6:00-7:00- Dinner \n\nREFUND POLICY \nRefunds will be charged a $50 fee up to 30 days before the event. \nTHERE ARE NO REFUNDS WITHIN 30 DAYS OF START OF THE EVENT.
